Rhubarb Crumble Pie
from Martha Stewart's New Pies and Tarts
1 recipe of your favorite pie dough
1 3/4 pounds rhubarb, trimmed and sliced
1 cup sugar
2 tbsp cornstarch
3/4 cup flour
1/3 cup light brown sugar
3 tbsp sugar
6 tbsp cold butter or margarine, cut into pieces
Roll out your pie crust and fit into a 9 inch pie shell.
Place on a baking sheet and put in the oven. Turn the heat down to 375 and bake until the topping is golden brown and the crust is lightly browned. Cool completely before serving.
